Pork Adobo

Philippine adobo is a popular Ilocano dish and cooking process in Filipino cuisine that involves meat, seafood, or vegetables marinated in vinegar, soy sauce, garlic, and black peppercorns, which is browned in oil, and simmered in the marinade.

Pork Adobo is one of my most favorite Filipino food to eat with no utensils involved   – you use just your bare hands to make a tiny scoop of rice act as the spoon for the meat and other food available.

Ingredients:

  • 2 lbs pork belly
  • 2 tbsp garlic, minced or crushed
  • 5 pieces dried bay leaves
  • 4 tbsp vinegar
  • ½ cup soy sauce
  • 1 tbsp whole peppercorn
  • 1 to 2 cups water
  • Salt to taste

Optional:

  • Potatoes

Instructions:

  1. Combine the pork belly, soy sauce, and garlic then marinade for at least 1 hour
  2. Heat the pot and put-in the marinated pork belly then cook for a few minutes
  3. Add water, whole pepper corn, and dried bay leaves then bring to a boil. Simmer for 40 minutes to 1 hour.
  4. Put-in the vinegar and simmer for 12 to 15 minutes.
  5. Add salt to taste.
  6. Serve hot. Share and enjoy!
